Empanadas_HLooking for great foods to make and freeze for the lazy, cold months ahead? I have one word for you: EMPANADAS.

The first time I ever had empanadas was courtesy of my friend Juan’s mom, who was the master after living several years in Argentina. I still haven’t found any that can compare to hers, but these recipes (from my friend Teresa, who spent a few years teaching in South America) come close.

If you’ve never had empanadas, they’re stuffed pastry pockets of savory deliciousness, varying in “stuffings” from beef to chicken to potatoes to olives to veggies to beans and even fruit, with every combo in between. Continue reading

Is there such a thing as a healthy St. Patrick’s Day? Turns out this green-tinged holiday could be better for you than you think.

That’s assuming, of course, you don’t skip out of work early to spend half a day sloshing plastic cupfuls of overpriced crappy beer made magically more palatable by the fact that it’s green.

Thanksgiving Crafts

Entertain guests and show your appreciation with these “thankful” Thanksgiving crafts. Best of all, they’re so easy, even your little pilgrims can help.

1. Grateful Napkin Rings

Cut strips of paper, decorate, and write things you’re thankful for. Then simply glue, staple, or tape the ends together to create a napkin ring.

Stamped Personalized Craft

Easy. Inexpensive. Meaningful.

This can make a fun guessing game at dinner, too. Try to guess which person created which ring.
